„White beans“ is a collective term for white to cream-coloured beans. They have thin skin, a high starch content and thus become soft and mealy when cooked.
Normal cooking time for white beans is approx. 1 ½ - 2 hours. White beans soaked in water for 12 hours only need approx. 60 minutes.
White beans are preferred for stews.
