The larger a pea, the more mealy it is. In proportion to the outer husk, large peas contain a large amount of starch and for that reason become particularly soft when cooked.

The normal cooking time for green and yellow peas is approx. 2 hours. Peas soaked in water for 12 hours only need approx. 60 - 90 minutes.
Peas are preferably used for soups and stews.
