Potato starch is pure starch in its natural state, which is derived from selected potatoes. It is particularly suitable for thickening. Cakes and pastries become more light if 1/3 of the flour weight is replaced by potato starch.

Soups, deserts and crèmes are thickened by adding this potato starch. If potato starch is used for thickening gravy, this will result in a creamy sauce. Always mix cold, add to the hot dish and boil briefly.
